In a large skillet put half cup of water, add salt and bring to a boil, add the spinach, cover and cook for 10 minutes, stirring often with a wooden spoon. Drain, squeeze and chop with a knife. Peel the shallots, wash and chop, then melt the butter in a pan, sauté the shallots and then add the spinach, add salt, pepper and parmesan and cook for 3 minutes.

Prepare boiled eggs and cook for 8 minutes since they started to boil. Drain the capers, dry and chop. Shell the eggs and cut them in half, remove the yolks and place in a bowl, mash with a fork and add the ricotta, olive oil, capers, parsley, salt and pepper, mix well until you have a smooth paste.

Put this cream in pastry syringe with a star nozzle and fill the egg whites. Put the spinach in a serving dish and put on eggs stuffed.
